Prune Whip
Ingredients
1 β cups pitted prunes, β cup water, β cup white sugar, 1 teaspoon lemon juice, 1 teaspoon vanilla extract, 6 egg whites, ΒΌ teaspoon cream of tartar
Instructions
Simmer prunes in a saucepan with water until tender, then drain and blend into a puree. Reheat the puree with sugar until dissolved, then stir in lemon juice and vanilla. In a separate bowl, whip egg whites with cream of tartar until stiff peaks form. Gently fold the prune mixture into the whites and transfer to a buttered, sugared 2-quart baking dish. Bake at 300 degrees F (150 degrees C) until golden brown. Chill in the refrigerator and serve cold topped with whipped cream.
