Ingredients

3 eggs, ½ cup butter, softened, ½ cup white sugar, 1 teaspoon lemon zest, 1 cup all-purpose flour, ½ teaspoon baking powder, 1 ¼ cups plums, pitted and quartered

Instructions

Preheat your oven to 375 degrees F (190 degrees C) and prepare a 9-inch tube pan with grease and flour. Whip egg whites in a small bowl until stiff peaks form, then set aside. In a separate large bowl, cream together butter and sugar before mixing in egg yolks and lemon zest. Incorporate a blend of flour and baking powder into the butter mixture, then carefully fold in the whipped egg whites. Pour the thin layer of batter into the pan and top with plums arranged skin-side down. Bake for approximately 40 minutes until a tester comes out clean, then let the cake cool on a rack before serving.
