Ingredients

6 egg whites, ⅛ teaspoon cream of tartar, 1 cup white sugar, 1 tablespoon cornstarch, 2 teaspoons distilled white vinegar, 1 ¼ cups heavy cream, chilled, 1 teaspoon vanilla extract, 2 teaspoons confectioners' sugar, 4 passion fruits

Instructions

Preheat oven to 400 degrees F (205 degrees C). Prepare an 8-inch springform pan by greasing and dusting with cornstarch. In a clean bowl, beat egg whites until stiff and glossy, then gradually beat in a mixture of cream of tartar, sugar, and cornstarch. Gently fold in vinegar and transfer the meringue to the pan, spreading it to the sides with a center depression. Immediately lower the oven to 250 degrees F (120 degrees C) upon placing the pan inside. Bake for 75 to 90 minutes, then let it rest in the oven with the door open for 15 minutes. Once cooled completely and removed from the pan, top the meringue with whipped cream mixed with vanilla and confectioners' sugar. Garnish with passion fruit pulp or sliced kiwi and chill before serving.
