Pork with Plum Sauce
Ingredients
2 tablespoons vegetable oil, 4 boneless pork chops, salt and ground black pepper to taste, 1 large clove garlic, minced, ¼ cup soy sauce, 2 tablespoons red wine vinegar, 2 tablespoons brown sugar, ¼ teaspoon ground ginger, ⅛ teaspoon ground cloves, 5 fresh plums, pitted and coarsely chopped
Instructions
Brown seasoned pork chops in oil over medium-high heat and set aside. Sauté garlic until fragrant, then add soy sauce, vinegar, sugar, ginger, cloves, and plums to the skillet. Simmer covered for 45 minutes, mash the softened plums, then return the pork to the pan. Cook for 10 to 15 minutes until the chops reach an internal temperature of 145 degrees F (63 degrees C).
