Ingredients

1 ½ cups milk, ½ vanilla bean, split (Optional), 1 teaspoon unsalted butter, 4 cups cherries (with pits), ½ cup all-purpose flour, 1 pinch salt, ½ cup white sugar, 3 eggs, 3 tablespoons heavy cream, 2 tablespoons white sugar

Instructions

Steep the vanilla bean in milk for at least one hour, then discard the bean. Preheat the oven to 350 degrees F (175 degrees C) and grease an 8-inch baking dish before arranging cherries in the bottom. Whisk together the flour, sugar, and salt, then beat in the eggs one at a time until smooth. Combine the infused milk and heavy cream into the batter, then pour it over the cherries. Bake for 45 to 50 minutes until golden. After removing from the oven, sprinkle with sugar and allow the clafoutis to cool slightly until set before serving.
