Ingredients

2 large ripe papayas, 2 ½ cups all-purpose flour, 2 tablespoons poppy seeds, 1 teaspoon baking soda, 1 teaspoon salt, 1 ¼ cups white sugar, ½ cup unsalted butter, softened, 2 large eggs, ½ cup buttermilk, ½ cup guava juice, 1 tablespoon vanilla extract

Instructions

Preheat the oven to 350 degrees F (175 degrees C) and grease a 9x5-inch loaf pan. Prepare the papayas by halving them, removing the seeds, and peeling the skin; mash the flesh and let it drain in a strainer for 10 minutes. In a bowl, whisk together the flour, poppy seeds, baking soda, and salt. Separately, cream the butter and sugar, then beat in the eggs one by one. Mix in the drained papaya, buttermilk, guava juice, and vanilla, then gently fold in the dry ingredients until just combined. Pour the batter into the pan and bake for about 1 hour and 15 minutes, or until a toothpick comes out clean. Let the bread cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
