Peach Muffins
Ingredients
3 cups all-purpose flour, 1 tablespoon ground cinnamon, 1 teaspoon baking soda, 1 teaspoon salt, 1 ΒΌ cups vegetable oil, 3 eggs, lightly beaten, 2 cups white sugar, 2 cups peeled, pitted, and chopped peaches
Instructions
Set your oven to 400 degrees F (200 degrees C) and prepare 16 muffin cups with grease or paper liners. In a large bowl, whisk together the flour, cinnamon, baking soda, and salt, while combining the oil, eggs, and sugar in a separate container. Blend the wet ingredients into the dry mixture until just moistened, then gently fold in the peaches. Fill the muffin cups and bake for 25 minutes until a toothpick comes out clean. Allow them to cool in the pan for 10 minutes before moving to wire racks to cool completely.
