Ingredients

1 (8 ounce) salmon fillet, salt and ground black pepper to taste, ΒΌ cup chopped basil leaves, olive oil cooking spray, 1 lemon, thinly sliced

Instructions

Preheat your oven to 400 degrees F (200 degrees C) and adjust a rack to the bottom position. Place the salmon fillet on a large piece of parchment paper, skin-side down, and season it with salt and pepper. Use a sharp knife to cut two 3-inch slits into the fish and fill them with chopped basil. Apply cooking spray to the fillet, top with lemon slices, and fold the parchment paper to create an airtight seal. Place the packet on a baking sheet and bake for about 25 minutes, or until the salmon reaches an internal temperature of 145 degrees F (65 degrees C). Discard the lemon slices and serve.
