The Ultimate Berry Crumble
Ingredients
2 cups all-purpose flour, ¾ cup white sugar, ¾ teaspoon baking powder, ¼ teaspoon fine salt, ¾ cup frozen unsalted butter, 2 large egg yolks, 1 ½ teaspoons vanilla extract, 1 teaspoon apple cider vinegar, or as needed
Instructions
Preheat your oven to 375 degrees F (190 degrees C). To make the crumble, whisk together flour, sugar, baking powder, and salt, then grate in frozen butter and toss to coat. Mix in egg yolks and vanilla, add vinegar, and use your hands to squeeze the mixture into dry clumps. For the filling, combine blueberries, raspberries, and blackberries with sugar, cornstarch, lemon juice, zest, and cayenne pepper. Press half of the crumble into a 2-quart baking dish, spread the berries on top, and sprinkle with the remaining crumble. Bake for 40 to 45 minutes until the top is browned and the filling bubbles, then let cool for 30 minutes.
