Ingredients

1 (8 ounce) package cream cheese, softened, 1 cup butter, softened, 1 ½ cups white sugar, 1 ½ teaspoons vanilla extract, 4 eggs, 2 ¼ cups all-purpose flour, 1 ½ teaspoons baking powder, ⅛ teaspoon salt, 1 cup candied cherries, halved, ¼ cup all-purpose flour, ½ cup chopped pecans

Instructions

Preheat the oven to 325 degrees F (165 degrees C). Cream together the cream cheese, butter, sugar, and vanilla until smooth, then beat in the eggs one at a time. Sift 2 1/4 cups of flour, baking powder, and salt together and fold them into the cream cheese mixture. Toss the cherries in an additional 1/4 cup of flour and fold them into the batter. Cover the bottom of an ungreased 10-inch tube pan with a layer of pecans, then spoon the batter over the nuts. Bake for approximately 75 minutes until a wooden pick comes out clean. Let the cake cool in the pan before running a knife around the edges and center to release it onto a plate.
