Ingredients

2 ½ cups blanched almond flour, 1 cup pitted and chopped dates, ½ cup chopped dried cherries, ½ cup chopped walnuts, 2 tablespoons chia seeds, or more to taste, ½ teaspoon baking soda, ½ teaspoon sea salt, ½ cup coconut oil, 1 egg, 2 tablespoons maple syrup, 1 tablespoon vanilla extract

Instructions

Preheat the oven to 350 degrees F (175 degrees C) and line two baking sheets with parchment paper. In a large bowl, whisk together the almond flour, dates, cherries, walnuts, chia seeds, baking soda, and sea salt. Add the coconut oil, egg, maple syrup, and vanilla extract, mixing with a spoon or fork until a dough forms. Use a small scoop to place the dough onto the prepared sheets. Bake for about 15 minutes until the edges are golden, then turn off the oven and let the cookies rest inside with the door closed for an additional 10 minutes. Remove from the oven and allow them to cool completely.
