Grandma's Skillet Pineapple Upside-Down Cake
Ingredients
1 stick butter, 1 ½ cups packed brown sugar, 1 (20 ounce) can sliced pineapple, 1 (4 ounce) jar cherries, 1 ½ cups all-purpose flour, 2 ½ teaspoons baking powder, ½ teaspoon salt, 1 ½ cups white sugar, ½ cup butter, 2 large eggs, 1 cup milk, 2 teaspoons vanilla extract
Instructions
Preheat the oven to 375 degrees F (190 degrees C). Melt one stick of butter in a cast iron skillet over medium heat, then sprinkle brown sugar evenly over the bottom and arrange pineapple slices with cherries in the centers. In separate bowls, sift together the dry ingredients and cream the sugar with the remaining butter and eggs. Gradually mix the flour mixture and milk into the creamed butter, stir in vanilla, and pour the batter over the pineapples. Bake for 40 minutes until golden brown, then let the cake cool in the skillet for 10 minutes before inverting onto a serving plate to serve warm.
