Plum Flummery
Ingredients
2 cups plums, pitted and sliced, 1 tablespoon water (Optional), 1 (.25 ounce) package unflavored gelatin, ½ cup hot water (Optional), ½ cup white sugar, 2 tablespoons lemon juice, ½ cup evaporated milk
Instructions
Simmer plums in a covered saucepan over medium-low heat for 5 to 10 minutes until soft, adding a tablespoon of water if the mixture thickens too much. Allow the plums to cool. In a bowl, dissolve gelatin in 1/2 cup of hot water, then stir in the cooled plums, sugar, and lemon juice until dissolved. Refrigerate for about 30 minutes until the mixture begins to thicken. Whip evaporated milk with an electric mixer until thick, fold it into the plum mixture, and beat again until fluffy. Chill for at least 3 hours before serving.
