Far Breton
Ingredients
9 ounces pitted prunes, 1 cup all-purpose flour, ⅝ cup white sugar, 1 tablespoon vanilla sugar, 1 teaspoon baking powder, 1 pinch salt, 4 eggs, 3 cups whole milk, 2 tablespoons rum
Instructions
Preheat oven to 450 degrees F (230 degrees C) and grease a shallow 2-quart baking dish. In a saucepan, cover prunes with water and simmer for 10 minutes until tender; drain and arrange them in the dish. Combine flour, white sugar, vanilla sugar, baking powder, and salt in a large bowl. Whisk in eggs one at a time, then gradually stir in milk and rum until the batter is smooth. Pour the mixture over the prunes and bake for 10 minutes. Reduce the heat to 400 degrees F and bake for another 30 minutes until the filling is firm and the top is browned. Serve warm or at room temperature.
