Ingredients

¼ cup butter, softened, 1 cup white sugar, 1 egg, 2 cups all-purpose flour, ½ teaspoon salt, 2 teaspoons baking powder, 1 cup fat-free evaporated milk, 1 teaspoon vanilla extract, ¼ teaspoon almond extract, 1 cup chopped fresh figs, 2 cups chopped fresh figs, ¼ cup packed brown sugar, ¼ cup water, 1 tablespoon lemon juice

Instructions

Preheat your oven to 350 degrees F and grease two 8-inch cake pans. Sift together the flour, salt, and baking powder, then separately cream the butter and sugar until fluffy before beating in an egg. Alternately mix the dry ingredients and evaporated milk into the butter mixture, fold in vanilla, almond extract, and one cup of chopped figs, and bake for 25 to 30 minutes. Finally, simmer two cups of figs with brown sugar, water, and lemon juice for 20 minutes to create a thickened filling to spread between the cooled layers and over the top.
