Ingredients

1 cup white sugar, 2 ½ cups all-purpose flour, 1 tablespoon baking powder, 1 teaspoon baking soda, 1 tablespoon butter, 2 cups pitted sweet cherries, 1 tablespoon white sugar, ½ cup olive oil, 4 eggs, 1 (6 ounce) container plain yogurt, 1 tablespoon olive oil

Instructions

Preheat your oven to 350 degrees F (175 degrees C). In a bowl, whisk together 1 cup of sugar, flour, baking powder, and baking soda. Melt butter in a skillet and cook the pitted cherries with 1 tablespoon of sugar until tender, about 8 to 10 minutes, then set aside. Make a well in the dry ingredients and pour in 1/2 cup olive oil, eggs, and yogurt; stir gently by hand to form a soft dough. Spread the batter into a 9x12-inch dish, drizzle with 1 tablespoon of olive oil, and top with cherries. Bake for 40 minutes until golden and a toothpick inserted in the center comes out clean.
