Dried Cherry Cake
Ingredients
½ cup chopped dried cherries, ½ cup hot water, ½ teaspoon almond extract, 1 ½ cups all-purpose flour, 2 teaspoons baking powder, ¼ teaspoon salt, 1 cup white sugar, 1 (8 ounce) container vanilla yogurt, ½ cup vegetable oil, 1 egg, 1 egg white, ¼ cup chopped pecans, 1 tablespoon white sugar
Instructions
Soak cherries in hot water and almond extract for 20 minutes before draining and patting dry. In a large bowl, whisk together flour, salt, baking powder, and 1 cup of white sugar, then mix in yogurt, eggs, and oil. Fold the cherries into the batter and pour into a greased and floured 9-inch round cake pan. Sprinkle a mixture of pecans and 1 tablespoon of sugar over the top. Bake at 350 degrees F (175 degrees C) for 35 minutes or until a toothpick comes out clean. Cool in the pan for 10 minutes before serving warm or at room temperature.
