Fresh Cherry Muffins
Ingredients
1 ½ cups all-purpose flour, ¾ cup white sugar, 2 teaspoons baking powder, ½ teaspoon salt, ⅓ cup vegetable oil, ⅓ cup milk, 1 egg, ½ teaspoon almond extract, 1 cup fresh pitted and quartered sweet cherries, 1 tablespoon white sugar
Instructions
Preheat your oven to 400 degrees F (200 degrees C) and place paper liners in a muffin tin. In a mixing bowl, combine flour, 3/4 cup sugar, baking powder, and salt. In a separate small bowl, whisk the oil, milk, egg, and almond extract together. Add the liquid mixture to the dry ingredients and stir gently until just combined, then fold in the cherries. Fill the muffin cups 2/3 full with batter and sprinkle with 1 tablespoon of sugar. Bake in the preheated oven for about 20 minutes or until a toothpick comes out clean. Cool on a wire rack.
