Poached Pears Belle Helene
Ingredients
6 cups water, 1 lemon, zested and juiced, 4 Bosc pears - cored, peeled, stems left on, 1 vanilla bean, 3 cups sugar, 1 cup prepared hot fudge topping, or as needed, 1 cup vanilla ice cream, or as needed
Instructions
In a heavy pot, combine water, lemon zest, juice, and pears. Add vanilla bean seeds, pods, and sugar, then bring to a simmer over medium-high heat. Submerge the pears with a plate and simmer gently for 20 to 25 minutes until tender. Let the pears cool to room temperature in the liquid, then transfer to a container and refrigerate for several hours or overnight. When ready to serve, warm hot fudge sauce and coat the bottom and sides of each pear. Serve in individual bowls with a spoonful of the poaching syrup and a scoop of vanilla ice cream.
