Easy Persimmon Jam
Ingredients
12 ounces persimmon flesh, cut into small chunks, 5 ounces white sugar, 3 ounces persimmon skin, finely sliced, 2 tablespoons lemon juice, ¾ ounce lemon zest, finely sliced
Instructions
Combine the persimmon flesh, skin, sugar, lemon juice, and zest in a small saucepan and bring to a boil over medium heat. Reduce the heat to low and simmer for about 10 minutes until the fruit softens and the jam thickens. Allow the mixture to cool for 30 minutes to set before transferring it to an airtight container to store in the refrigerator.
